  • Whisk flour, sugar, baking powder, spices and salt in a bowl.
  • In a separate bowl whisk together milk, pumpkin, melted butter, and egg.
  • Fold mixture into dry ingredients.
  • Spray or grease a skillet and heat over medium heat: pour in 1/4 cup batter for each pancake.
  • Cook pancakes about 3 minutes per side. Serve with butter and syrup.
  • Makes about six 6-inch pancakes.

  1. I've tried several Pumpkin Pancake recipes. All the others have fallen short of my expectations, but we all loved these! I made a double batch, added extra cinnamon, and also added toasted pecans and they were delicious. Although the batter was very thick, they were still light and fluffy. Keeper!
     
  2. This was very good and tasty. Both DH and I agreed we wouldn't want to eat these all the time, because they make for a sweeter breakfast, but still good in the fall. We ate them with syrup and butter, just butter, and just coolwhip, and they were all tasty toppings!

I ended up adding quite a bit more milk to thin the batter, but they came put lovely. With each bite I felt like I was eating pumpkin pie!! We ate every last crumb, thanks for posting!
     
  5. yummy!! I really enjoyed these. Next time I will cut down on the spices though as they were a bit too much for my tastes. Excellent recipe!! I will make again.

  1. I doubled this recipe and used a whole wheat flour and whole can of pumpkin, no butter at all and subbed applesauce for the sugar. I ended up adding quite a bit more milk to thin the batter, but they came put lovely. With each bite I felt like I was eating pumpkin pie!! We ate every last crumb, thanks for posting!
     
  2. I loved these pancakes before I even tasted them. Instead of measuring out 6 T., I also used 1/3 c. of canned pumpkin and approximately 1/4 to 1/3 c. of additional skim milk. The spicy pumpkin aroma from these pancakes was mouth watering! I had to eat a pancake as I was cooking the rest of the batter. It was that good. Yummalicious!!
     
  3. What a nice fall breakfast! I love the consistency and the flavor. The only changes I made were using applesauce instead of butter and pumpkin pie spice instead of the individual ingredients. Excellent pancake recipe!
     
  4. These are fantastic! I made them vegan, substituting soy milk for the milk and 1 tbsp of cornstarch for the egg. I also put in vegetable oil instead of the butter. I always leave my batter to sit for about 10 minutes to make it extra fluffy but who know if this recipe even requires that!
